For those of you unaware, Kale is considered one of the miracle foods. It fights fat, is high in antioxidants, high in vitamins and fiber. It is known as standing out nutritionally head and shoulders over most other recipes. I wanted to find some creative ways to slip it into some of our meals.
Cheesy Kale Casserole
8 c kale chopped and cleaned (you can buy it in a bag already like this at Publix) |

2 leeks- cleaned and sliced | 1/2 c milk |
1/2 c shredded havarti cheese | 3 Tbl butter |
1/2 c heavy cream | 2 Tbl flour |
1/4 c seasoned bread crumbs (optional) | Salt & Pepper to taste |
Boil the kale for three minutes, drain, then rinse in cold water.
In a frying pan, melt 1 Tbl butter and sautee the leeks for five minutes
Add the other two Tbl butter and the flour and mix.
Add the milk and cream and keep over heat until it thickens.
Remove from heat and add kale, cheese, seasonings & mix well
Transfer to greased 1 qt baking dish, top with bread crumbs and bake at 350 for 20 mins
That's the recipe as written. It was good but a little flat- next time I plan to try adding a dash of cayenne or maybe try adding a cheese with a stronger flavor- maybe sharp cheddar.
