    tomorrow night for my daughter-in-law and myself...using only two chicken breast (they are big ones about 2/3 lbs each and Newman's Own marinara pasta sauce instead of mixing up all the spices with the crushed tomatoes.

    and with a tossed salad it will be dinner before she leaves to meet up with son in Atlanta and drive over to Fort Rucker, AL for grandboy's graduation from flight school and then she and son will take off for Dubai where she will stay for 4 weeks before she comes back and then we get serious about plans for grandboy's wedding the end of May...exciting times for our family.

    Today I cooked a spaghetti squash and made a spaghetti sauce to go over it and pretend that I was eating a big plate of pasta! I normally make my sauce with a base of Newman's Own Roasted Garlic pasta sauce; however, I had a $2 coupon for Classico pasta sauces so, I purchased the Traditional Pasta Sauce to which I added ground beef, fresh onion and mushrooms. Wow, that sauce is delicious. I know for the purist amongst you out there, jarred spaghetti sauce is a no-no; but, I know I can't improve on the professionals so I don't even try. Anyway, I was really surprised at how good the Classico sauce was as I am usually very loyal to Newman's Own.

    I can and do recommend Classico Traditional Pasta Sauce to those of you who are so inclined. Name:  classico.jpg

    Just printed out the recipe...already chopped up the onion, garlic and water chestnuts and put in the fridge. Yum Yum...chicken is thawing...

    Had to buy the sesame oil, hoisin sauce, soy sauce, rice wine vinegar, chili garlic sauce, ginger and water chestnuts as these are staples that I don't usually have "on hand"...in fact, I have never purchased any of those ingredients before in my entire long life.

    Ok, my review...verdict...

    Was easy to make; but, requires constant attention. No walking away from the stove.

    It was tasty but just a little too spicy for my taste. If I were make it again I would reduce hoisin sauce from 1/3 to 1/4 cup and the Asian chili garlic sauce from 1 Tbs to 1/2-3/4 Tbs.

    The recipe called for butter lettuce; however, I found it to be too delicate (as I thought it would be, but decided to follow the recipe to the letter) and as soon as I tried to pick it up and wrap it around the chicken mixture the lettuce split and fell apart, so I cut it up and ate it with a fork. I have a brand new head of green leaf lettuce (which I will use for the left overs) tomorrow, those leaves should hold up much better. Every P.f. Chang that I've been to serves it with iceberg lettuce which I never ever buy--to me, iceberg lettuce is nothing more than hard water and has no nutritional value (and this is my veggie for this meal).

    Just a side note, I've never used ground chicken before and was surprised at how soft and mushy it is while cooking. I have used ground turkey which is much more firm. This was 92% lean and am assuming it is all white meat...but, not sure.

    All in all, not bad...won't throw out the left overs and will save them for tomorrow--a fairly good one-pan meal for me. Mine isn't as pretty as that shown in the video and recipe...I put the sliced onions in near the end of cooking as called for in the recipe and didn't save any of the green tops to sprinkle on top which adds to the "prettiness."

    I don't recall ever before buying and cooking a frozen pizza...I always just figured they would be garbage, if I am going to eat pizza I want a really yummy one...I am not talking about those that a recently put together at places like Sam's Club and are basically fresh and ready to pop into the oven when you get home. I am talking about the cheapo ones that are in the frozen food counters at grocery stores that have expiration dates of months and months or even a year down the road.

    However, today I was putting together a "clicklist" order for Kroger that I would pick up this afternoon and in their weekly sales flyer amongst the "Buy 5 save $5" items (I had already chosen 4 of the items and was looking for a 5th) I found Newman's Own Thin and Crispy Supreme Pizza that is regularly priced at $4.99 and save $1 in this 5-$5 sale plus I downloaded to my loyalty card a 50-cent coupon making the final price $3.49. So, I added that to my list and picked my order up around 2 p.m. Tonight I cooked said pizza, and OMG it was delicious! The entire pizza has 960 calories (it really is a very thin, thin crust! which I love!), so I ate half of it along with a salad with Newman's Own Lite Honey Mustard Dressing; so, for about 550 calories I had a yummy dinner. I highly recommend this pizza for anyone who is just craving pizza and doesn't want to pay $18-20+ to have one delivered. Besides all the profits from Newman's Own goes to charity!

    Happily, when I opened the box the pizza looked exactly like the picture on the box! Well, except for the crust--it wasn't quite as brown as the picture until after I baked it for 12 minutes at 425 degrees.

    Tonight I just had a newly discovered Bird's Eye product and it was yummy and I made an entire meal on it. It had a mere 240 calories and was supper filling. For two it would make a side dish with an added piece of meat or fish or in slick's case a few slices of bacon. I just ate the who package which was about 10 ozs and fill stuffed. Of course one could add a piece of meat or fish and also eat the whole package if they wanted too, it would have been too much for me, of course I think as a left over for the next day it would be perfectly fine.

    I have also tried the new Bird's Eye (at least they are new to me as I hadn't seen them before a few weeks ago) Protein Blends. I have tried the California, Italian, and New England Style ones and they are all really tasty and filling.     Over the past couple of weeks I have eaten all three of these frozen meals and found each one of them to be surprisingly good for food requiring only to be heated in a non-stick pan for from 9-13 minutes. Each bag made two meals for me and on the Tuscan braised beef meal I added about a half bag of frozen Brussel spouts because I needed the green leafy veggie. Each bag will feed two people and if you are bigger eaters you could certainly add a salad, some type of artisan bread or rolls, or a dish of fruit to round out the meal. These meals make for "good eating" without much prep or work in the kitchen.

    We have tried both brands and really enjoyed the Bertolli and will purchase that again. The PF Changs not so much but as they say to each their own, we all have different tastes

    I love breakfast for dinner...made an omlet with onions, mushrooms, spinach, a little cheddar cheese and two eggs. It was yummy, and I thawed out some frozen sliced peaches for desert. It was a perfect dinner in my opinion.
