    Now that the winter months are in our sights, this looks like it would be a great soup for a cold day:

    CROCKPOT STUFF PEPPER SOUP

    Prep time


    Cook time


    Total time



    Author: Carrie
    Recipe type: crock pot
    Cuisine: soup
    Serves: 6

    INGREDIENTS

    • 1 pound of ground beef or ground turkey (browned)
    • onion chopped (I used red onion, but any will do)
    • red pepper -chopped
    • green bell pepper (any color will do) -chopped
    • 1 can diced tomatoes, 14 oz
    • 1 can of tomato sauce, 14 oz (the bigger can)
    • 1 can of water or beef stock (just fill up the can)
    • 1 tsp of oregano
    • 1 tsp garlic salt
    • 1 tablespoon Worcestershire sauce
    • pepper
    • 2 cups cooked white rice



    INSTRUCTIONS

    1. Place everything (except the rice in the crockpot).
    2. Let cook for 6 to 8 hours.
    3. Spoon into a bowl and top with a spoonful of cooked rice.
    4. Enjoy!


    We have made this recipe several times and the kids always get seconds and thirds. Ive tried to make extras to freeze, but everyone keeps eating it!
    Have picky kids?

    If your kids are picky, dont worry they will love it. The peppers get really soft so there wont be a texture problem. Our kids love it and actually request it.

    Try it different ways:

    1. Make it healthier by chopping up caulifer and using it instead of rice check out my easy Cauliflower rice recipe. My kids ate it with rice last week, but I used cauliflower to get my extra veggies in.
    2. Try making it with Sausage. Reader, Crystal, use Italian sausage that we have gotten for cheap with our coupons. Her family loves it

    I made this soup today for my daughter-in-law and myself. It was very good!!! I also made a Jiffy cornbread to go with it and that was a perfect accompaniment. The recipe made an amount that was perfect for the two of us...we ate tonight, she took some for lunch tomorrow and there was enough for me to have for lunch or dinner tomorrow. So many soup recipe make so much that unless you freeze a lot of it, it is way too much unless you are feeding a bunch of people. For the rice, I got an Uncle Ben 90-seconds in the microwave white rice, and dumped it in the crockpot just before serving so it wouldn't get overcooked and gummy.

    Edited to add that rather than chop up half an onion, half a green pepper, and half a red pepper I used this:

    That way you can have the ingredients on hand and make wherever without having to run to the store to buy fresh peppers. This mix has yellow peppers as well as the green and red peppers.

    I got all the stuff to make this soup and will make either this afternoon or tomorrow. I am not making it for the "detoxing" feature (not really sure what this means and if it is really worthwhile or helpful) but because it just looks good and healthy and I can eat on it for a many days (I'll put the leftovers in individual serving-sized containers and freeze those I will not use within a couple of days).

    Let us know how you like it...it is in my opinion a nice alternative from chili but just as easy and simple to make...little preparation necessary.

    Ok, made this soup and it is surprisingly tasty and filling. I used about 1/2 of the veggies called for as using the amounts in the recipe, IMO, is too much for the amount of broth it calls for. Maybe if all the veggies are fresh more water cooks out of them...i don't know because I thought with frozen it is nearly the same as fresh.

    I used 3 large stalks of celery (2 cups seemed like way to much) and I used one 12-oz bag of frozen peas and carrots; one 12-oz bag of frozen broccoli florets; and a 2/3rd of bag of frozen onions...the chicken (I used chicken tenders with no visible fat), broth and spices I used the exact amounts called for. It was really yummy and I have frozen six 12-oz servings, ate two yesterday and have two in the fridge for today.

    I really think the spices make this soup so good, I wouldn't omit any of them!
